What is the first thing you do when you wake in the morning?
The first thing I do when I wake up in the morning is drink a tall glass of warm lemon water. Hydration is so important first thing in the morning, because your body dehydrates while you are sleeping. The warm temperature of the water is also great for flushing the digestive system and cleansing the liver and lymphatic system. A happy belly is the best way to start my day.
What is your favorite go-to breakfast?
My favorite breakfast is peanut butter banana nice cream topped with fresh fruit, shredded coconut and nuts. It’s sweet, salty, full of protein, antioxidants, phytochemicals and keeps me full for a while. I typically will vary the fruit toppings and nuts by using whatever I have on hand. Sometimes it’s strawberries and almonds, other days it’s blueberries and cashews. It’s my favorite way to use up over-ripe bananas. Just peel, freeze, then toss in a blender and voila – nice cream for breakfast!
What food can you not live without?
Chickpeas! I just love them and they are such a versatile legume. I add them to soups, salads, Buddha bowls, pasta, and I absolutely could not live without hummus!
Can you tell us more about your Plantie Potions!
Yes of course! My Plantie Potions are 100% raw, organic plant-based smoothies that I manufacture and bottle here in Pottstown PA. I love smoothies because they are such a fast and easy way to get lots of nutrition into the body, not to mention fiber, protein, antioxidants, the list goes on and on! Many smoothies out on the market today however are loaded with added sugars, fruit purees and fruit juice concentrates, and are oftentimes promoting a lot of deceptive health benefits. I really wanted to create a line of smoothies that are actually health-promoting and good for you, which is why my Potions only contain raw, organic fruits, vegetables and water. No added sugar or dairy. My mission is make it easy for people to have access to healthy plant-based foods on the go, and Plantie Potions do just that.
You have a free plane ticket to anywhere in the world. Where would you go and why?
I would love to travel to Norway, especially the Svalbard Islands, which are located in the Arctic Ocean, halfway between Norway and the North Pole. There is something about this pristine and untouched area of the world that is just so magical to me. Experiencing the unique wildlife and seeing beautiful polar bears in their natural environment would be a dream come true. J
What does superfood mean to you?
In my opinion a superfood is any food that packs a nutritional punch. It can be something as simple as a piece of fruit or vegetable, or an exotic seed or herb. Superfoods are all around us, so no matter what your budget, you can find superfoods at whichever local store or market you frequent.
Tell us more about your favorite food memory and how it has inspired the colorful recipes of The Plantie!
Ah food memories, such a wonderful question! My favorite food memory is probably when I would come home from school as a young child and ask my mom if I could make myself a salad as an after-school snack. She was always so shocked, because her favorite snacks when she was my age were cookies and chocolate. I was the opposite though, always drawn to vegetables. I suppose it was my destiny from a young age to become a Plantie! J
What is your most popular recipe right now?
My most popular recipe is probably my Coconut Cabbage Lentil Soup. Many of my clients choose to cook this recipe with me in their private cooking lesson because it is a very simple soup, but packed with amazing nutrients and flavor.
