SUPERFOOD SPRING ROLLS

Here’s what you’ll need:
- Rice paper wrappers
- Vegetables and herbs of your choice: carrots, peppers, spinach, cucumber, avocado, fresh mint or cilantro are some delicious options.
- Add superfoods: Use the BRAMI Lupini Beans and Moringa Superfood Powder from this month’s box!
You can get creative with the ingredients you put inside with a rainbow of fruits and vegetables and it will completely change the flavor of your roll. Add fruit for sweet rolls, or vermicelli noodles and tofu for a Vietnamese inspired fresh roll. For a full spectrum of colors and health benefits try:
Mint – antioxidants + calms stomach
Cilantro – Vitamin C, A + antioxidants
Bell Pepper – vitamin C, carotenoids + fiber
Mango – vitamin C, A, fiber + antioxidants
Carrot – beta carotene + vitamin A
Beets – fiber + antioxidants
Method:
- To assemble your spring rolls, fill a large bowl or wide skillet with warm water and immerse rice paper to soften for ~10 seconds.
- Remove and lay wrapper flat onto a plate or flat surface.
- Place your choice of ingredients in a row across the bottom third of the wrapper leaving about 2 inches uncovered on each side.
- Gently fold over once, tuck in edges, and continue rolling until seam is sealed.
There you go, you have made your first Superfood Spring Roll! It may take a little practice so don’t feel bad if your first few attempts are a fail.
Now for the dipping sauce. A good dipping sauce will make or break your Superfood Spring Roll. Here are a few we enjoy:
Sweet Thai Dipping Sauce:
1 cup granulated sugar
1/2 cup cider vinegar
4 cloves garlic minced
2 Thai bird chilies thinly sliced
1/2 teaspoon salt
Creamy Spicy Peanut Dipping Sauce:
1/4 cup creamy peanut butter
1 Tablespoon hoisin sauce
2 teaspoons soy sauce
1 clove garlic, mashed
1 teaspoon Sriracha sauce or a chile garlic sauce, optional for spice
1-2 Tablespoons warm water, or more as needed
Basic Vietnamese Dipping Sauce (Nuoc Cham):
3 tablespoons lime juice
2 tablespoons sugar
½ cup water
2 ½ tablespoons fish sauce
