After Dinner Mints Recipe with Chocolate and Mint Leaves

We absolutely love these chocolate-dipped mint leaves to serve post-dinner party especially if you’re really looking to bust out the creativity guns to impress. You can also use them as a garnish for ice cream or any other creative dessert idea you have in mind. The best part – they take less than 5 minutes to make, and after a quick chill in the refrigerator, they are ready to be enjoyed!

Here’s what you’ll need:

  • a mint plant
  • coconut oil
  • cacao powder, we used Organic Raw Cocao Powder by Wild Foods (from May’s box!)
  • stevia, maple syrup or preferred sweetener
  • parchment paper

Method:

For this recipe we only used enough to cover 8 leaves, so feel free to add more or less to this recipe based on your serving size. Use a microwave safe measuring cup and add 1 tablespoon of coconut oil. Melt in the microwave for 15 second intervals until melted. Add your sweetener to taste. Next, add slowly about 1 tablespoon of cacao powder to the oil until it creates a pudding like consistency. If you don’t get that consistency right away just keep adding more cacao or more melted coconut oil as needed. It will start to thicken as it sits.

Next, dip the fresh mint leaves (after they’ve been rinsed and dried) into your chocolate mixture, holding the stem side with your fingers and whisking the leaf around until 3/4ths of the leaf is covered with chocolate. Place on a parchment-covered baking sheet or plate and repeat until all of your leaves have been covered.

Place in the fridge for 5-15 minutes until chocolate has hardened. Gently remove from parchment paper, and serve immediately. Depending on the room temperature, they can begin to melt within 5 or so minutes.
