Maca + Sweet Potato Chocolate Brownies Recipe

Maca + Sweet Potato Chocolate Brownies rosehive superfood box

We first tried this recipe by Deliciously Ella in 2013 and it has been a staple ever since! We’ve tweaked it over the years to this incredible concoction we have here! 10 ingredients, totally natural, totally unrefined, totally freaking delicious! This recipe is so heavenly you will want to eat the whole thing with a spoon, seriously – just the mix of pureed sweet potatoes and dates is enough to send you straight to superfood heaven.

Fun fact about cacao: it contains phenylethylamine, which causes a change in blood pressure and sugar levels leading to feelings of excitement and alertness. Zing. Enjoy this recipe:

What you’ll need:

  • 2 Medium sweet potatoes
  • 12 medjool dates (pitted)
  • 6 tablespoons of pure maple syrup
  • 1/2 Cup ground almonds
  • 2 tablespoons of melted coconut oil
  • a pinch of salt
  • 1/2 Cup ground oats
  • 6 tablespoons of raw cacao powder
  • 3 tablespoons maca powder

For the Icing:

  • 2 tablespoons of coconut oil
  • 2 tablespoons of almond butter
  • 1 tablespoon of maple syrup
  • 2 tablespoons of cacao powder

Method:

  1. Start by pre-heating the oven to 375 degrees. Begin peeling and cutting sweet potatoes into chunks to be boiled or steamed until they become soft enough to mash.
  2. Add sweet potatoes and pitted dates to a food processor. In a separate bowl, place the remaining ingredients. Stir well. Fold the sweet potato mixture into the remaining ingredients.
  3. Place onto a lined baking dish and cook for 45-50 mins or until you can pierce the brownie with a fork and bring it out clean. Remove the tray and allow it to cool for about ten minutes – this is really important as it needs this time to stick together!
  4. While the brownies are cooking make the icing by simply melting all the ingredients together and stirring well, then place in the freezer for 15 minutes and then the fridge for 15 to firm up a bit.
  5. Remove the brownies from the tray and leave to cool completely before icing otherwise your icing will melt! Spread the icing on top, cut into squares, dig in and enjoy!
